Happy Thanksgiving!

Happy Thanksgiving! My good friends, Daniel & Janisha were hosting thanksgiving dinner. And it was delicious! Janisha made all of the entrees by herself. What a champ! My only contribution is this pecan pie that I made from scratch. Recipe here. The only thing I did differently is that I added vanilla to the filling and substituted the dark corn syrup with molasses.

Chipotle Burger with Onion Rings

This week I decided to let myself go and go with greasy food. Chipotle Burger was tender and delicious. The onion rings were a surprise hit, and so easy to make too! I made some changes to the burger. I didn’t put avocado, garlic, and steak seasoning (I put chipotle seasoning instead). I also sauteed the onions first before i mix it with the burger patty. Recipe here. The onion rings were basically made from pancake mix and some spices that I already have (adobo seasoning, basil-garlic-tomato seasoning, and chipotle seasoning). Recipe here.

Baked Fish and Roasted Peppers swim in Loaded Potatoes(Shaun)

Parmesan Baked Fish(Entree)
I decided to make a fish dish for this past week because I have rarely dabbled in anything fish related, other than simple pan fried fish dishes. So this time I decided to go with the parmesan crusted baked fish. It wasn’t too hard to make due to the ease of getting fillets as opposed to de-boning a whole fish. The recipe suggested a haddock be the best choice, but I couldn’t find it so I decided to go with a sea trout instead and it still turned out well, excluding some complications with bones in Silvinas fish. I also replaced the bread crumbs with a different kind of herb/bread crust mixture which I got at the grocery store. A small heads up is to not use too much salt, I recommend half of what the recipe suggests for salt.

Roasted Peppers and Loaded Baked Potatoes (Sides)
For the sides I decided to go with some roasted peppers and loaded baked potatoes. The roasted peppers weren’t too hard to make, though you have to watch out for the roasting part, you don’t want to get it too burnt. For the mixture of the peppers I used chardonnay wine instead of red vinegar, so it turned out sweeter compared to the recipes suggestions(I’m a rebel like that). The loaded baked potatoes probably took the longest to make due to the bake time. Recipe says one hour, but I suggest an hour and a half or 2 depending on the size of the potatoes. I excluded the green onions because I didn’t think they were worth the effort, sorry if I’m not top chef material. For the final touch I sprinkled some bacon bits on top of the loaded potatoes which I fried a little earlier. You’d want to fry them early so you can crush them and make them all crunchy-like.

Green Skirts and Tarts (Silvina)

For my night, I decided to do something tasty but relatively easy to make. I used the recipe here and I have to say, it wasn’t too shabby. If I could do it again, I’d fill the plate more (I think I heard Shaun’s stomach growling after) with either a 2nd side or more meat.

Portuguese Egg Tart
One of the most popular dishes from my hometown in Macau is of course the Portuguese egg tart. It should look like this, but instead it looked like this:

To be honest though, it just tasted like a regular (ghetto) egg tart, nothing really Portuguese about it. I’ll probably keep trying though.

A Burnt Finger: A Closer Step to Culinary Greatness? (Christie)

Meatloaf & Sweet Potato Casserole

So this week, we went with the American theme. I burnt my ring finger when I was cooking. Shaun and Silvina decided to be mean and said that I am cursed for life. Not nice you guys.. haha jk. I chose to cook the classic meatloaf with sweet potato casserole as a side dish, and end the meal with vanilla ice cream drizzled with homemade strawberry raspberry syrup. The meatloaf itself is pretty easy to make. It just takes a bit of time to cook (about 1 hour). You can view the recipe here. The only thing I changed was that I put bread crumbs instead of rolled oats, omit the tomato soup, and added extra ketchup. The recipe for the meatloaf sauce can be found here. The sweet potato casserole is also fairly easy, but also takes a lot of time to cook. I decided to put less sugar in the casserole, and it wasn’t sweet enough in my opinion. I love the pecan toppings. It added that extra crunch. Recipe here.

Strawberry & Raspberry Sundae with Vanilla Ice Cream and
Banana Topping

This dessert is tasty and super easy to make. To health freaks out there, you can switch the vanilla ice cream to frozen yogurt. Strawberry and Raspberry syrup was delicious. Will make this again for sure… probably tonight : ) Recipe here.
