Cheese Baked Rice

I decided to go with the famous chinese cheese baked rice this past week. I must say I messed this one up. It was good until the part where I had to add cheese. I thought I had added enough cheese because I had used half the block of cheese I bought on only the first layer, but I guess it still wasn’t enough. If I had to do it over and probably will at some point in my life, I’ll add wayyy more cheese. Recipe is baked rice with cheese.

Tomato, Basil and Cheese Baked Pasta w/ Zuppa Toscana

This week, I decided to go Italian. I made baked pasta with Zuppa Toscana, which is an Italian Tuscan sausage soup (I always get this soup from Olive Garden >,<) Making these dishes was a lot of work. I literally spent more than 2 hours making these dishes. They are actually quite tasty! I was satisfied with the result… First of all, the recipe for Zuppa Toscana lies about how long it takes for the soup to cook. There is just no way you can simmer the soup for 15 minutes for the potatoes to get done. That is just… impossible. I had to simmer the soup for like 30-40 minutes… It also tastes a tad salty because of the sausage and the bacon. But other than that, it was pretty darn good. View recipe here. The baked pasta is also delicious. The only thing I substitute was that I used Parmesan cheese rather than the fancy “Parmigiano-Reggiano”. I was about to buy it, and almost had a heart attack when I saw that it is almost $14 for a block of cheese. I was cheap, and a bit broke. So, I went with Parmesan. Recipe here. We have so much leftovers… I guess I will be eating a lot of soup and pasta for the next couple of days! WIN!
