Meatloaf & Sweet Potato Casserole

So this week, we went with the American theme. I burnt my ring finger when I was cooking. Shaun and Silvina decided to be mean and said that I am cursed for life. Not nice you guys.. haha jk. I chose to cook the classic meatloaf with sweet potato casserole as a side dish, and end the meal with vanilla ice cream drizzled with homemade strawberry raspberry syrup. The meatloaf itself is pretty easy to make. It just takes a bit of time to cook (about 1 hour). You can view the recipe here. The only thing I changed was that I put bread crumbs instead of rolled oats, omit the tomato soup, and added extra ketchup. The recipe for the meatloaf sauce can be found here. The sweet potato casserole is also fairly easy, but also takes a lot of time to cook. I decided to put less sugar in the casserole, and it wasn’t sweet enough in my opinion. Strawberry & Raspberry Sundae with Vanilla Ice Cream and
Banana Topping

This dessert is tasty and super easy to make. To health freaks out there, you can switch the vanilla ice cream to frozen yogurt. Strawberry and Raspberry syrup was delicious. Will make this again for sure… probably tonight : ) Recipe here.
